Konjac Phad Thai

Konjac Pasta in Asian Style

Ingredients

  • 600g broccoli
  • 250g shrimp, thawed
  • 200g almond-tofu
  • 30ml oil
  • 20ml soy sauce
  • 150g konjac noodles
  • 10g sesame seeds
  • 1 clove garlic
  • 10g fresh ginger
  • Salt, pepper

Cook the konjac pasta in salted water, drain and let it dry. Wash the broccoli, trim and cut into florets.

Rinse the shrimp in a sieve with cold water, place on a chopping board and pat dry with kitchen paper.

Heat rapeseed oil in a frying pan, press garlic through a garlic press and fry gently at medium heat until light brown. Then remove the garlic from the pan and set aside on a piece of kitchen paper.

Fry the shrimp and tofu in the pan until crispy, season with salt and pepper, and set aside.

Now add the broccoli to the pan, fry it and let it cook covered for about 4 minutes.

In the meantime, peel the ginger, chop it finely and mix with soy sauce and garlic.

Add the konjac pasta, shrimp, and tofu to the broccoli and deglaze with the ginger-soy sauce mixture.

Finally, toast the sesame seeds and use as a topping for the dish.
